Apple and blueberry compote recipe

Ingredients

  • 3 apples, peeled, cored & chopped

  • 3 tbsp orange juice

  • 150g blueberries, frozen

  • 2 tbsp maple syrup

Preparation


  1. Put the apple chunks in a saucepan with the orange juice.

  2. Turn the heat to a medium setting and bring the mixture to a simmer.

  3. Cover the pan and cook for around 5 minutes, until the apples are very soft.

  4. Add the blueberries and maple syrup, then stir well.

  5. Cook for 3 more minutes until the blueberries have softened.

  6. If you would like to create a smoother sauce, use a blender or food processor to adjust the consistency. Otherwise, leave the mixture to cool then serve with yoghurt or granola.



Tips

To store: Once it has fully cooled, put it in an airtight container and keep it in the fridge for up to 5 days.
