Homemade cordial recipe


The perfect drink for those warmer days, this homemade raspberry cordial from Jamie Oliver is so refreshing.

This recipe is made from only 3 ingredients, but it’ll work with almost any type of berry - rather than just raspberries, try using a mix of strawberries, blueberries and blackcurrants instead.

It’s so quick and easy to make, and once you’re done you can dilute it with water, soda or even Prosecco.

Ingredients

  • 600g raspberries

  • 2 lemons

  • 250g golden caster sugar

Preparation


  1. Put a saucepan over a medium heat then add the raspberries and 300ml of water.

  2. Using a peeler, peel the zest from the lemons and add it to the pan.

  3. Bring the mixture to a simmer and cook for 10 to 15 minutes until the fruit has broken down. Make sure you stir the mixture regularly, and don’t let it boil.

  4. Put a piece of kitchen roll at the bottom of a sieve, then strain the fruit-water mixture into a bowl.

  5. Pour this mixture back into the pan, then add the sugar and the juice of both lemons.

  6. Put the pan over a medium-low heat and cook the mixture. Stir it regularly until the sugar has dissolved.

  7. Pour it into a sterilised bottle or jar.


Tips

To store: Once the juice has cooled down, put the bottle in a cool dark place for up to one month. To help it last a little longer, the bottle will also keep in the fridge.
