Sri Lankan leek stir fry recipe

Ingredients

  • 200g leeks, washed & sliced

  • 1 onion, sliced

  • 1/2 tsp turmeric

  • 1 tsp chilli powder

  • 1 sprig curry leaves

  • Salt

  • 2 tbsp coconut oil


Preparation

  1. Put a wok on a low heat and add the leeks.

  2. Cook for a minute, then add the onion, turmeric, chilli powder, curry leaves and salt.

  3. Mix well and cook for a few minutes until any water released by the leeks has evaporated.

  4. Add the oil to the mixture then stir everything well.

  5. Cook for about 3 minutes, stirring often.

  6. Serve hot.



Tips

To store: Once cool, put this stir fry in an airtight container and keep in the fridge for up to 3 days.
