Swede, leek and cauliflower soup recipe


Thick, creamy and full of flavour, you’ll love this delicious soup by The Joyful Table.

Serve it with crusty bread, and you can even enjoy leftovers for lunch the next day.



Overview:

Cook time: 45 minutes

Serves: 4-6 people


Ingredients: 

1 1/2 tbsp coconut oil

2 large leeks, sliced & green tops removed

2 tsp minced garlic

3/4 tsp cinnamon

1/2 tsp nutmeg

3 swedes, chopped

1.5 litres chicken stock

1/2 head of cauliflower, chopped

1 tsp salt

1/4 tsp pepper

250ml coconut milk


Instructions:

  1. Put a large pan over a medium heat and add the coconut oil. 

  2. Once melted, add the leeks and sauté until soft.

  3. Add the garlic, cinnamon and nutmeg. Cook for 30 seconds.

  4. Add the swede and chicken stock. Bring your mixture to the boil, then reduce the heat and simmer for 15 minutes.

  5. Add the cauliflower and seasoning, and simmer for another 20 minutes, or until the veg is tender.

  6. Add the coconut milk and mix well.

  7. Blend the soup until it reaches your desired consistency.

  8. Taste and adjust the seasoning, if needed. Serve hot.


Storage tips 

Once cool, put this soup in an airtight container and keep in the fridge for up to 3 days.
