Preparation
Put the watermelon and mint in a mixer. Blend until smooth.
Make sure you have 600ml of liquid. If you don’t have enough, just add some water and mix well.
Take an ice lolly mould - you’ll need six 100ml moulds - and pour in your watermelon, mint and water mixture. If you don’t have a mould, pour the mixture into paper cups, cover with foil, and then push a lolly stick all the way through.
Put the moulds in the freezer for at least 4 hours until completely frozen.
Remove the lollies from the mould and enjoy.
Tips
To store: Once they’re ready, wrap them in baking paper and put each one in an airtight freezer bag - this will stop freezer burn. Keep them in the freezer and eat within one week.
