Watermelon ice lolly recipe

A great treat for both adults and kids, it’s a brilliant alternative to ice cream that’s perfect for staying hydrated this summer.


Full of natural goodness, it’s a fantastic little recipe!

Ingredients

1/2 watermelon, rind removed

2 springs of mint

Preparation

  1. Put the watermelon and mint in a mixer. Blend until smooth.

  2. Make sure you have 600ml of liquid. If you don’t have enough, just add some water and mix well.

  3. Take an ice lolly mould - you’ll need six 100ml moulds - and pour in your watermelon, mint and water mixture. If you don’t have a mould, pour the mixture into paper cups, cover with foil, and then push a lolly stick all the way through.

  4. Put the moulds in the freezer for at least 4 hours until completely frozen.

  5. Remove the lollies from the mould and enjoy.


Tips

To store: Once they’re ready, wrap them in baking paper and put each one in an airtight freezer bag - this will stop freezer burn. Keep them in the freezer and eat within one week.
