Zero waste lemon sorbet recipe

There’s nothing better than a refreshing dessert, except a zero waste refreshing dessert - and this recipe from Zero Waste Chef has it all!

Not only does it use up each bit of the lemon, but it’s delicious and easy to make as well.

Whether it’s just for you, or you’re impressing guests with your cooking skills, this sorbet is bound to go down a real treat.




Nutritional content

Prep time: 20 minutes + cooling time

Ingredients

  • 300ml water

  • 300g sugar

  • 350ml lemon juice

  • 2 tbsp lemon zest

Preparation

  1. Put a metal baking dish in the freezer.

  2. Put a pot over a medium heat then add the water and sugar. Stir regularly until the sugar dissolves.

  3. Remove the pot and let the mixture cool to room temperature.

  4. Add the lemon juice and zest. Mix well.

  5. Take your dish out of the freezer, pour in the mixture, then put it back in the freezer.

  6. Take the dish out of the freezer every half an hour and stir the mixture thoroughly with a whisk.

  7. The sorbet should be completely frozen after around 4 hours. Transfer it to an airtight, freezer-safe container, then put it back in the freezer for storing.

Tips

To store: Once you have made the sorbet, put it in an airtight, freezer-safe container and keep it frozen for up to 1 month.
